Jan Caplinger walked into the classroom April 25 at Cornerstone Community Church lugging her 6-quart Insta Pot.

She then went out and came back with the food necessary for her demonstration on how to use an Insta Pot.

She cleaned the pot and proceeded to explain how to read and use the pot as she plugged it in and preheated it. She then placed the beef stew meat in the pot along with some water and two packets of beef stew seasoning and locked the lid in place.

At this point, President Ruby Niccum opened the meeting of the Friends and Neighbors Home Extension Club with the Pledge of Allegiance and the club creed .

The secretary’s report was given by Helen Lutes. Treasurer Donna Abner reported she collected dues from 13 members and sent the monies on to the state. Our citizenship leader, Vera Robbins, gave a lesson on “The Story of Military Taps.”

Niccum reminded the ladies that our May meeting will be the Achievement Night on May 16 at Spraytown Methodist Church. We will carpool from Darlage Custom Meats at 6 p.m. This is a pitch-in meal. We are asked to donate nonperishable items for the Freetown Shed for You.

Niccum informed the group that the Jackson County officer position of secretary has been filled by Karen Newkirk. Thank you, Karen. She also stated that our club qualifies for a Blue Award.

Charlotte Lovegrove’s tip of the day was “If you have scratch resistance on your eyeglasses, do not stand in front of the oven door and bend down. The flash of heat from the oven can and will cause the crack-resistant film to crack, and it cannot be repaired.”

During the meeting, Caplinger explained the various stages as they occurred on the Insta Pot. When the cooking process was finished, she released the pressure and opened the pot. Oh my! What a wonderful smell filled the room.

But to everyone’s chagrin, she said we couldn’t eat it, as it was her husband’s supper; however, Robbins was our hostess and she had prepared a feast of ham and chicken salad sandwiches, potato chips with French onion dip, homemade cookies, banana nut bread and lemonade.

Our June 27 meeting will be at Cornerstone Community Church with Debbie Shubert as hostess.
